Revamped restaurant greets guests at Hilton Waikoloa Village

Kamuela Provision Company, the fine dining oceanfront restaurant at Hilton Waikoloa Village on the Big Island of Hawaii, has revamped its menu from top to bottom. The restaurant’s interior has also been refreshed.

“The new menu … is a melding of local ingredients and cultures,” chef Robert Love said in a press release. “I love to spotlight unique, locally grown produce like winged beans and different kinds of citrus. I’ve incorporated finger limes, mountain apples and other ingredients, and I use these to create dishes that combine flavors from the different cultures of Hawaii. For instance, the plum wine pork belly fuses flavors from Thai, Japanese and Philippine cuisines.”

Aside from the plum wine pork belly, other appetizers include a smoked Kona shrimp lomi-lomi and New Zealand oysters “flown fresh.” For their main dish, diners can choose from a variety of entrees, including the Lilikoi Curry, which features lobster, tiger shrimp and a daily local fish with pineapple relish. There’s also a brick oven chicken huli-huli, Chinese style mahi-mahi, rib-eyes, scallops and lamb chops.
