Prince Waikiki gets a new executive chef: Travel Weekly

The Prince Waikiki has a new executive chef, Jeremy Shigekane, who will be overseeing all culinary operations for the Honolulu property, including at the 100 Sails Restaurant and Bar.

“Shigekane looks forward to placing his singular spin on fresh island cuisine and fine dining,” the hotel said in a press release.

An award-winning chef, Shigekane has worked in New York, San Francisco and in Hawaii at Hoku’s, Chai’s Island Bistro and at The Royal Hawaiian. 

He also served as executive chef under James Beard Foundation award-winning chef George Mavrothalassitis at the longtime Honolulu restaurant Chef Mavro, until it closed in 2019. Following that, Shigekane was the chef-owner of M by Shigekane, a modern Hawaii-French bistro.
