Holland America Line has updated the menu at Italian restaurant Canaletto.
The refreshed menu offers a three-course meal that includes appetizer, entrée (including dishes with pasta made fresh on the ship) and dessert. Canaletto also offers a special of the day.
New appetizers are burrata with plum tomato salad and pistachio-garlic gremolata; and grilled tiger shrimp with salsa verde, fennel and lemon-herb grattato.
Canaletto will serve three new entrées with fresh pasta: casarecce pesto Genovese with roasted almonds, semi-dried cherry tomato and Parmesan; trenette with mussels, scallops and calamari in a seafood tomato reduction with anchovy-herb crumb; and broiled lobster tails over asparagus and spaghetti tossed with garlic and olive oil.
The other pasta dishes are paccheri with Italian sausage and spaghetti with shrimp and clams.
Other new entrées are herb and parmesan-crusted chicken breast; chianti-braised beef short ribs with roasted butternut squash and vincotto; and seared Mediterranean sea bass with fava bean purée, fresh ricotta, roasted vegetables and romesco sauce.
Previously offered once a week, the ossobuco with mascarpone and saffron risotto will be on the menu daily.
New on the dessert menu is a lemon ricotta cheesecake served with mixed berries, Galliano syrup and whipped cream.
The restaurant will also mix new cocktails, including an Aperol spritz, spumoni made with Holland America Line’s De Lijn gin, a Tuscan Lemon Drop made with Stoli Citros vodka and limoncello, and a Canaletto Bellini with choice of peach, strawberry or passion fruit purée.
Dining at Canaletto costs $25 per person (plus $15 if lobster tails are ordered). The restaurant also can be a specialty-dining option in the Have It All package.
