Delicious stay at the Nobu Hotel Los Cabos

With a roster of celebrity names behind the new Nobu Hotel Los Cabos, it’s tough not to feel like a celebrity yourself. The latest venture for Nobu Hospitality, a company comprising celebrity chef Nobu Matsuhisa, Oscar-winning actor Robert De Niro and Hollywood producer Meir Teper, the Nobu Hotel Los Cabos is without a doubt the brainchild of three men who have devoted their careers to creativity.

Let’s start with the design. A sandy color palette sets the tone and is juxtaposed against fire and water elements, giving the minimalist hotel a sense of place: Mexican desert meets the sea. The design swings more Japanese than Mexican, but the color scheme and ode to the natural environment reminds guests that they are very much in Baja.

The lobby, an expansive, open-air space, leads to an outdoor living room with fire pits and sofas with views of the Pacific. Each guestroom is meticulously designed, from the accent shower wall paved with river stones to the dreamy, cloudlike bed. 

No detail is overlooked when it comes to the food, which isn’t a surprise considering Matsuhisa is at the helm. The Playabar, with ceviches, tostadas and fresh salads, and the Pacific Restaurant for Mexican fine dining are just the beginning. 

The real stars of the show are Malibu Farm, the latest outpost of the California-based original, and, of course, Nobu Los Cabos. Malibu Farm specializes in local cuisine but with a California twist, like the menu of veggie pizzas (the avocado pizza is excellent) and the grilled octopus with roasted cauliflower and poblano sauce. Nobu devotees will find all of their favorites at the Los Cabos restaurant, including the miso cod and the legendary sushi. (Note: The Nobu is a European plan property, but guests can book an all-inclusive plan, though that rate doesn’t include the Nobu restaurant.)

While the ocean in front of the hotel isn’t safe for swimming, there are three pool areas that guests can choose from. The Cortez pool has the most energetic, party atmosphere, with open cabanas, lounge chairs in the pool and easy access to the Playabar. The Pacific pool offers a bit more privacy, with many smaller pools shrouded in green foliage and enclosed cabanas offering more seclusion. In front of the Nobu restaurant is an infinity pool, which is the designated adults-only pool, though the other pools don’t exactly position themselves as family pools. While the hotel is family-friendly, complete with a kids club, the vibe lends itself more to couples.

The Nobu Hospitality portfolio also includes properties in Chicago; Las Vegas; Miami Beach; Palo Alto and Malibu, Calif.; London; Manila, Philippines; and Barcelona, Ibiza and Marbella, Spain. Still to come are Atlanta; Sao Paulo; Toronto; Warsaw, Poland; Riyadh, Saudi Arabia; and Tel Aviv.
