Whiteface Lodge prepares for a very merry Adirondack holiday

It’s the most wonderful time of the year in the Adirondacks at the premier, all-suite luxury retreat, Whiteface Lodge. This year’s festivities will officially kick-off at Whiteface Lodge on Dec. 5, 2019 with a celebratory tree-lighting ceremony in Kanu restaurant, an annual event that brings together family, friends and the local community. Open to the public, Whiteface Lodge welcomes all to enjoy hot chocolate, coffee and cookies while a local choir leads a festive sing-along. Santa Claus has been known to take a break from his seasonal prep work for a special guest appearance as well.

For locals and travelers considering a High Peaks holiday, the culinary team at Kanu takes on the work so guests can enjoy the magic of a family holiday meal spent together. Featuring the finest regional ingredients from local farms plus North American-native fish and game, Whiteface Lodge’s Executive Chef Joshua Cunningham has planned two celebratory holiday feasts with highlights including:

Kanu’s three-course Christmas prix-fixe dinner, served Dec. 24 and Dec. 25. First course options include Maine Lobster Bisque with crispy Serrano ham and a tarragon crème fraiche; a Winter Greens Salad with N.Y. state apples, toasted walnuts, crispy prosciutto, Dutch knuckle cheese, and apple cider vinaigrette; Wood Roasted Local Beets with honey comb, Asgaard Farms Chevre and black pepper grissini; or Braised Local Beef Short Ribs. For their second course, guests may choose between Christmas Goose with grilled peaches, roasted baby brussel sprouts and potato croquettes in a black currant pan gravy; Sous Vide Herbed and Garlic Local Beef Tenderloin served with king trumpet mushrooms, salt baked shallots and romanesco broccoli; Seared Sea Scallops and Almond Pork Belly served with chanterelle mushrooms, apple, and arugula; or Hubbard Squash Ravioli with blue line cheese, apple cider reduction and sage butter sauce. For dessert, guests will be hard-pressed to choose between Chocolate Espresso Mousse with white chocolate cream; NY Cheesecake with mulled blueberries; or Apple Bread Pudding with brandy cream. Kanu’s Christmas dinner is $80 per person, exclusive of tax, gratuity and beverages.

Celebrate the year to come at Kanu with a four-course New Year’s Eve Prix-Fixe Dinner on Dec. 31. The feast begins with choice of Winter Truffle Bisque featuring cèpes, fingerling potato, and tarragon; Sugar House Little Dickens served with apple, caraway, and rye crumbles; or Butternut Squash accompanied with burratini, spinach, pepitas, and vin santo vinaigrette. Second course options include Squab with walnut, Parisan market carrots, wild rice, and vanilla velouté; Green Lipped Mussels featuring Jamón Ibérico, heirloom tomatoes, capers, saffron jus and chardonnay; or Pork Belly served with braised kale, green onion, juanita pepper, and molasses and mustard. For the main event, guests can indulge in Pasture Raised Chicken with black mission fig, radicchio, sweet potato and honey thyme jus; Beef Tenderloin & Pioppino Mushroom with egg noodle, leeks, potato straws, truffle crème fraiche and red wine demi-glace; Winter Flounder with lump crab, fingerling potatoes, mini sweet peppers, and chive and caper hollandaise; or Grilled Halloumi accompanied with haricot vert, red potatoes, baby heirloom tomatoes, capers, and kalamata olives. Guests have a sweet way to end 2019 with thier choice of Chocolate Espresso Mousse with white chocolate cream; Apple Bread Pudding with brandy reduction and chantilly cream; or NY Style Cheesecake with mulled blueberries. Kanu’s New Year’s Eve feast is $90 per person – $135 with wine pairings for each course – exclusive of tax and gratuity.
